Distillery
A still was purchased in 2009 and our distilling adventure began. The focus has always been on single malt whisky, since that is, at its core, distilled beer that is barrel aged. However, when one has a still in the building, you play with it. Our main playground is the production of Concepts spirits, essentially our test kitchen to produce a variety of spirits in short runs. Gin was one of those spirits, and we perfected our recipe to produce a full time gin. We also produce hard seltzers, called Supergood, made with real fruit juice (never a flavouring).
